Ok, so today is National Blonde Brownie Day!

I know just yesterday was Granola Bar Day and now suddenly it’s Blonde Brownie day and you probably officially think I’m crazy and I probably am but I just REALLY have always wanted to give the below recipe a shot…and finally I had my excuse to execute it.

White Chocolate Blondies

In high school, we found ourselves at a certain chain restaurant a lot. Like, there wasn’t as much back in our town then, and for some reason we always went to this “neighborhood” establishment because I was too busy being a teenager to really worry about where we were going, we just needed a place to “hang out.” Remember those days? Yikes. I wish I could quietly be at another table and watch my teenage self with my semi-responsible adult eyes that I have now. Or maybe I don’t. Anyways…

White Chocolate Blondie with Warm Maple Butter Sauce

They had this dessert – I think then it was just called the “White Chocolate Blondie” but it came out in a sizzling hot skillet – and it was a blondie with a big scoop of ice cream on top and this ridiculous maple sauce. It was hot/cold, and it was the best flavor explosion my teen self had ever tasted. It was the one thing from that place that I loved to eat. Back then, I never thought about creating it at home. Over the last few years, I have told myself that this magical dessert would be recreated in my kitchen. I knew it probably wouldn’t be too hard.

Peanut Butter Ice Cream Sauce

There is no reason to ever buy store-bought ice cream sauce. Why? Because this fabulous recipe exists. I don’t think I could ever come up with this on my own out of thin air, but Joy the Baker did. Go buy some vanilla ice cream and enJOY!

Recipe

Peanut Butter Ice Cream Sauce

makes about 1/2 cup sauce, enough for 4 sundaes

From the Joy the Baker Cookbook

Ingredients

  • 2 tbsp unsalted butter, melted
  • 1/2 cup creamy peanut butter
  • 1/4 cup powdered sugar
  • pinch salt
  • 1/2 tsp vanilla extract
  • 1 tbsp milk or cream

Combine all ingredients in a small saucepan over low heat. Once heated through, peanut butter mixture will be smooth and easily pourable.

Pour over scoops of vanilla ice cream. Go crazy and add chocolate sauce, whipped cream, nuts, bananas, or a cherry on top!

Grilled Pineapple with Brown Sugar Rum Sauce…and Ice Cream

Do you want to be transported to a tropical island? Are you sick of the crappy weather? (Anyone who lives in Seattle in June knows what I mean). Do you love having the excuse to add booze to anything you make?

Then I found the perfect treat for you!

Cookin Canuck’s Grilled Pineapple with Brown Sugar Rum Sauce. Totally tropical and amazing. The photos I took do not do this dessert justice (head over to her site, she does a way better job than me). I just decided to make things boozy-er by soaking the pineapple slices in rum for a few hours.

Recipe

Grilled Pineapple with Brown Sugar Rum Sauce and Ice Cream

Adapted from Cookin Canuck

Ingredients

  • The Sauce:
  • 1/4 cup (4 tbsp) unsalted butter
  • 2/3 cup brown sugar
  • 2 tbsp all-purpose flour
  • 1 cup half-and-half
  • 3 tbsp dark rum
  • 1 tbsp fresh lemon juice
  • 1/4 tsp vanilla extract
  • The pineapple:
  • Canola oil, for brushing the grill
  • 1 (4 lb.) pineapple, skin removed, cut into 8 (3/4 inch) rounds, core removed, OR canned pineapple rings
  • 2 – 3 cups rum
  • 1/2 cup brown sugar, spread out on a plate
  • Vanilla ice cream, to serve

Instructions

  1. The pineapple: Soak the pineapple slices in rum, for a minimum of about 3 hours, or overnight if possible. Dip each pineapple slice in brown sugar so it will get nice an caramelized.
  2. The sauce: In a large skillet or medium saucepan set over medium heat, melt the butter. Whisk in the brown sugar and flour. Cook, whisking constantly, for about 2 minutes to eliminate the taste of the raw flour.
  3. Pour in the half-and-half and cook, whisking constantly, until the sauce thickens, about 5 minutes. Remove from heat and whisk in rum, fresh lemon juice and vanilla extract. Keep the sauce warm over low heat until ready to use, whisking occasionally.
  4. The pineapple: Preheat grill to medium-high heat. Brush grill with canola oil. Lay the pineapple on the grill and cook, about 5 minutes, turning halfway through cooking.
  5. Remove the pineapple from the heat, and serve with ice cream and the brown sugar rum sauce.

Pineapple Malted Milkshake

There are some recipes out there that are so fun, so easy, and so unique that I have to try them right away. A pineapple malted milkshake? Definitely covers all three.

I happened to have everything on hand except for the malted milk powder (which I thought was weird and freaked me out) but I went for it anyways. Thank god it’s not the same as Whoppers, because I hate whoppers with a fiery passion that consumes my soul…Ok, that might be a slight over exaggeration…

The milkshake turned out divine, and the malted taste is subtle enough for me to handle. I restrained myself from adding some ice cubes (a must for me on most homemade milkshakes) and next time I would probably add a few to make it a homerun.

Recipe

Pineapple Malted Milkshake

from the Joy the Baker Cookbook

Makes one large milkshake, or two smaller ones

Ingredients

  • 1 cup milk
  • 2 cups vanilla ice cream
  • 3 tbsp. malted milk powder
  • 1/2 tsp. pure vanilla extract
  • 1 cup fresh pineapples chunks

In a blender combine the milk, ice cream, malted milk powder, vanilla, and pineapple. Blend on high until smooth and creamy. Pour into a tall glass and savor the goodness immediately!
