Chocolate Peanut Butter Balls

I am so very thrilled to be bringing you some famous family balls! When I was a kid, my mom would always make various types of balls around the holidays. It has been YEARS since we have revisited the tradition, and I needed to get these recipes on lockdown! I’m kicking off our famous balls recipes with Chocolate Peanut Butter Balls. These are super easy, decadent, and delish! Better than any store bought peanut butter treat I have ever had, I love the little crunch you get from the crispy rice cereal.

Off we go into how easy these are!

All you have to do is mix the crisp rice cereal with powdered sugar, then add the butter and peanut butter alternatively in a few batches until everything is combined. Throw the mixture in the fridge until it has firmed up…

Then line a rimmed baking sheet with waxed paper and form the mixture into balls. You can make whatever size you like, each of my balls are about 2 bites each, just a little over a tablespoonful!

Then you get ready to dip your balls into chocolate! Paraffin was in the original recipe, but I didn’t use it. I think it’s pretty unnecessary unless you are going for a super glossy and smooth look, plus you lose some of the pure chocolate flavor. (If you haven’t already noticed, my balls definitely aren’t perfect. But in my opinion, taste always trumps looks when it comes to balls).

These totally brought me back. I can tell you, anyone who loves a good peanut butter treat will love these balls. They are awesome straight out of the freezer. The best part is you can make these in advance, freeze them, and then gift them when you are ready. Stay tuned for more famous family balls recipes!

Chocolate Peanut Butter Balls

makes about 3 dozen balls

Ingredients

  • 3 cups crisp rice cereal
  • 2 cups powdered sugar
  • 2 cups creamy peanut butter
  • 1/2 cup (1 stick) melted butter
  • 12 oz semi-sweet or dark chocolate chips or chunks
  • 1/8 lb paraffin (optional)

Directions

In a large bowl, mix together the crisp rice cereal and the powdered sugar. Add the butter and peanut butter alternatively in thirds until the entire mixture is well blended. Refrigerate mixture until cold and firmed up, for at least an hour.

Remove mixture from refrigerator and place waxed paper on a rimmed baking sheet. Form peanut butter mixture into balls, I make mine about 2-bite sized, maybe a little bigger than a tablespoonful each. Place the balls on the waxed paper.

Gently simmer 2 inches of water in a medium saucepan or double boiler. If not using a double boiler, place chocolate and parrafin (if using) in a medium-sized heatproof bowl and place the bowl over, not touching the simmering water (this creates your homemade double boiler). Melt the chocolate until smooth. Remove from the simmering water and get ready to dip your balls into the chocolate. You can use a fork to dip, or a wooden skewer, whatever works! Let balls dry on the waxed paper and chill in the fridge for about an hour before removing.

Balls will keep for at least a week in the fridge, even longer in the freezer.

Fruity Crispy TreatsBy normal Crispy Treat standards, we don’t have anything too crazy going on here. Just your standard Crispy Treat recipe, but add in some fruit loops. I mean, there are so many more unique Crispy Treat recipes out there, why care about this one…? I care for some very personal reasons which I’ll get into, but here are your more basic reasons:Fruity Crispy Treats1.) Super Easy.
2.) Super Tasty! It’s a great change from the chocolatey crispy recipes that are popular.
3.) Super pretty, colorful, and fun! Totally great for kids.Fruity KrispiesNow I can get into my personal reasons for loving these specific treats…Back when I was first out of college and had a very not-fun job, I would have to run and get food for clients pretty much everyday. Yes, it sounds more like an internship, but nope – it was part of my job. I usually didn’t mind having to run out and get stuff, because it meant some solo time away from the office.Fruity KrispiesOne of my favorite places to go to was Oddfellows, an awesome cafe/bar/bakery in Seattle. The best part about this place was the treat case! Everyday there would be different breakfast pastries, cookies, and other sweets. Their Fruity Crispies always stood out to me. I had never seen Crispies made with fruit loops before and I always wanted one (and pretty much everything else) whenever I went in to pick up large orders. I always vowed I would make my own one day since I knew they would be easy. It’s funny that this is such a vivid memory for me, when they had way more innovative and complex baked goods available. I think it goes to show that sometimes basic and classic are always best. Oh, and anything with the colors of the rainbow.Fruity KrispiesI’m pretty sure Oddfellows no longer has these Crispies – I have read they have gone through a couple of different bakers over the years, and apparently they had great donuts available for awhile, something that was never in the treat case when I made my visits back in the day.Fruity KrispiesI may no longer have that awful job or a reason to go to Oddfellows now that I moved from Seattle to Portland…but I’ll always have these Fruity Crispy Treats.Fruity Krispies

Recipe
Fruity Crispy Treats
Inspired by Oddfellows Cafe in Seattle

Ingredients

  • 3 tablespoons butter or margarine
  • 1 package (10 oz., about 40) regular marshmallows OR 4 cups miniature marshmallows
  • 4 cups Crisp Rice Cereal (such as Rice Krispies)
  • 2 cups Fruity Rings Cereal (such as Fruit Loops)

Directions

1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.

2. Alternately add crisp rice cereal and fruit rings cereal. Stir until well coated.

3. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray or butter. Cool by placing in the refrigerator for about 2 hours. Cut into squares and enjoy!

MICROWAVE DIRECTIONS (this is the lazy method that I usually do):
In microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Follow steps 2 and 3 above. Microwave cooking times may vary.

White Chocolate Coconut Krispies

Rice Krispies are pretty darn American, and pretty darn tasty. It is so easy to fancy them up a bit with different flavors – chocolate butterscotch, chocolate mint, peanut butter…but I never tried coconut OR white chocolate until today. And…YUM.

Recipe
White Chocolate Coconut Krispies

Ingredients

  • 3 tbsp butter
  • 1 package (10 oz.) regular marshmallows, OR 4 cups miniature marshmallows
  • 6 cups crisped rice cereal
  • 1 cup shredded coconut
  • 1 cup white chocolate chips
  • red and blue sprinkles for 4th of July! (optional)

Add butter and marshmallows to a microwave safe bowl. Microwave for about 90 seconds, remove from microwave and stir. Microwave for another minute if necessary.

Slowly add crisped rice cereal, about 2 cups at a time. Stir. Add shredded coconut and white chocolate chips, stir until combined.

Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Refrigerate for about an hour. Cut into squares.
