When I was pregnant, I fantasized about having a fizzy Bellini around Christmas. Since my original due date was December 22nd, I was really hoping for a Christmas Bellini, it was all I wanted! Things have a funny way of working out, don’t they? Turns out I could have started drinking Bellini’s in mid-November, but of course, I didn’t get around to making one until Christmas anyways.

Recipe
Extra Boozy Bellini’s
By Baked Northwest
Makes 6-8 Drinks

Ingredients

  • One (1 lb.) bag of frozen peaches
  • 1/2 cup triple sec or other orange liqueur
  • 1/4 cup vodka
  • 2 tbsp. peach jam or preserves
  • juice from 1 lemon (about 2 tbsp.)
  • Champagne, Prosecco, or any other Sparkling Wine for serving

Directions

Add the peaches, triple sec, vodka, peach jam, and lemon juice to a blender. Blend on high until smooth. You can add extra booze (or water) to the mixture if it’s too thick, the mixture should be a smooth, but slightly thick consistency. The goal is to have a nice boozy smoothie!

Add the mixture to a pitcher and chill in the refrigerator for at least an hour. When ready, pour mixture into champagne flutes to fill about halfway. Top with Prosecco to serve.

Peaches N' Cream Icebox CakeSo, icebox cakes may be my favorite thing ever.

The first time I had one, I thought I was eating the best cake in the world. Let it be noted I am picky about cakes – give me a cookie or brownie over a cake any day. So my Mom made a chocolate mint cake, which I have yet to share here (yes, failing at blogging as always). I literally thought I was eating a cake that was baked in the thinnest of layers, and was so moist and delicious I just couldn’t believe it. Imagine my shock and awe when my mom told me the cake was just chocolate wafer cookies and mint whipped cream, thrown in a fridge and then *poof* morphed into one of the easiest and greatest treats I had ever had.Peaches N' Cream Icebox CakeThat, my friends, is the magic behind icebox cakes. No turning on the oven – not many crazy ingredients. You just have to find yourself some good crunchy cookies at the store and have a good springform pan. Okay – you are buying store bought cookies, try not to freak out. That is why these are called icebox cakes instead of refrigerator cakes – they are retro! Raspberry-Peach Smoothie…with Coconut Water

Raspberry-Peach Smoothie made with Coconut Water

The last time I went to Costco (an occurring theme in my life) as soon as I walked in there were loads of coconut water. “NEW!” “ON SALE!” Naturally, I HAD to buy some. Coconut water is supposedly healthy…with antioxidants and all that jazz…I had been meaning to try some.

The stuff they sell in major bulk at Costco.

This is something that always happens. You buy a 1,239,012,839,012 pack of something at Costco because you can’t resist and then end up hating it. I LOVE coconut, how could I hate it in water form?  I don’t even know how to describe the flavor…just weird. Doesn’t quench thirst at all.

I was hatching a plan on how to pawn the stuff off to my friends when genius Jordan said, “Just use it to make one of your smoothies.”

So I give you…Peach-raspberry Coconut water Smoothie

I was nervous…but it ended up tasting MUCH better than the water by itself. I’m considering it even healthier than the water alone since all I added was fruit.

Recipe

Raspberry-Peach Smoothie with Coconut Water

Ingredients

  • 1 banana
  • 1 handful (about a cup) frozen peaches
  • 1 handful-ish (maybe half a cup? Wing it) frozen raspberries
  • 1 Vita Coco Coconut Water (11.1 ounces)

Throw all ingredients into a blender and blend until smooth.

Makes 1 really large smoothie, or 2 smaller servings.
