When I was pregnant, I fantasized about having a fizzy Bellini around Christmas. Since my original due date was December 22nd, I was really hoping for a Christmas Bellini, it was all I wanted! Things have a funny way of working out, don’t they? Turns out I could have started drinking Bellini’s in mid-November, but of course, I didn’t get around to making one until Christmas anyways.

Recipe
Extra Boozy Bellini’s
By Baked Northwest
Makes 6-8 Drinks

Ingredients

  • One (1 lb.) bag of frozen peaches
  • 1/2 cup triple sec or other orange liqueur
  • 1/4 cup vodka
  • 2 tbsp. peach jam or preserves
  • juice from 1 lemon (about 2 tbsp.)
  • Champagne, Prosecco, or any other Sparkling Wine for serving

Directions

Add the peaches, triple sec, vodka, peach jam, and lemon juice to a blender. Blend on high until smooth. You can add extra booze (or water) to the mixture if it’s too thick, the mixture should be a smooth, but slightly thick consistency. The goal is to have a nice boozy smoothie!

Add the mixture to a pitcher and chill in the refrigerator for at least an hour. When ready, pour mixture into champagne flutes to fill about halfway. Top with Prosecco to serve.

Valentines Cookies

Happy Valentines Day! I am not the greatest cookie decorator, but I thought I would share these special LOVE cookies I made for my friend Ursula’s very surprise engagement. A few weeks ago, I was supposed to go to Seattle but wasn’t sure if I was going to make it, but I had a feeling Ursula’s boyfriend Chris might propose to her before their housewarming party…I text him something like, “Hey I might not be able to make it to Seattle this weekend, but if you have any ‘special’ plans there is no way I’m going to miss out!” I proceeded to find out he indeed was proposing…so I rushed so make these cookies as a special surprise.Valentines Cookies

These are the best sugar cookies ever, we also found a great royal icing recipe that I’ll post below. But OMG I still can’t believe one of my BFF’s is getting married!!! One year back in college, Ursula and I both didn’t have Valentines, but Thank God we had each other…She made me one of the most gigantic and awesome Valentines Day cards I have probably ever received (sorry Jordan) and we ended up having a pretty hilarious day. I still Love You Baby Urs!!!

Heart Cookies

Regardless of your relationship status, at least eat a lot of chocolate today. Or drink. Or BOTH!!! These cookies are the next best thing (possibly better).

Valentines Cookies

Recipe
Classic Sugar Cookies (Grammy’s Recipe)

  • 1 cup (2 sticks) butter
  • 1 ½ cups sugar
  • 1 egg
  • 1 tsp. vanilla
  • ½ cup sour cream
  • 4 cups flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • ½ tsp nutmeg

Cream butter and sugar. Add egg and vanilla, mix thoroughly. Add sour cream, mix
thoroughly.

Sift together flour, salt, soda, baking powder and nutmeg. Add to butter mixture in
two parts and mix thoroughly.

Divide into two parts and wrap in wax paper. Refrigerate at least 1 hour.

Roll out cookies on a floured surface until they are about 1/4 inch thick. Use cookie cutters to cut cookies into desired shape, or use the rim of a wine glass to make circular cookies.

Cook at 400 degrees F on a greased cookie sheet for 10 minutes. You never want them to get too browned around the edges, or they’ll be super crunchy. We like ours on the softer side.

Royal Icing
from Bon Appetit

Ingredients

  • 3¼ cups powdered sugar
  • 2 large egg whites
  • Food coloring (optional)

Directions

Using an electric mixer on medium-high speed, beat powdered sugar and egg whites until white, thickened, and tripled in volume, about 5 minutes. Add water by the tablespoonful until icing no longer holds a peak. Divide icing into smaller bowls and color with food coloring as desired.

Champagne Chicken…Simple, elegant, delicious…and a great option for a Valentine’s Day dinner!

Almost ready to serve…Perfect with mushrooms and fresh chives.

Recipe

Serves 6

Ingredients

  • 6 boneless, skinless chicken breast halves
  • 6 tbsp. lemon juice, freshly squeezed
  • freshly ground pepper to taste
  • 1/4 cup butter, divided
  • 1 tbsp. olive oil
  • 1/4 cup shallots, diced
  • 2 medium cloves garlic, minced
  • 3/4 cup chicken stock
  • 3/4 cup champagne
  • 1 1/4 cups heavy cream
  • 2 tbsp. chives, minced
  1. Pound each chicken breast to an even thickness. Sprinkle each with 1/2 tablespoon of lemon juice and black pepper to taste.
  2. In a large skillet, melt 2 tablespoons butter, add oil and saute chicken over medium-high heat, about 2 minutes per side, until nicely browned. Remove from pan, cover and keep warm.
  3. In the same pan, melt remaining 2 tablespoons butter. Saute shallots until translucent. Add garlic and cook 2 minutes more, scraping up browned bits from the bottom of the pan.
  4. Pour in chicken stock, champagne and remaining 3 tablespoons lemon juice. Bring to a boil and cook to reduce to a thin glaze. Add cream and boil for 6 minutes until thickened. Return chicken to pan and heat through. Sprinkle with minced chives and serve immediately over rice or pasta.
