Fruitcake...with a cat

It happens at this time every year…you can’t avoid it…the fruitcake joke. I have to admit, I never really understood it, since I was never subjected to fruitcake growing up. I was never gifted it, never tried it, never really thought about it. All I knew is it must be really, really bad for it to somehow come up as this terrible thing every year.

Enter Christmas 2014 – what I am deeming as the “fruitcake phase.” I found out from my mom and aunt that not only did they grow up with my grandpa making fruitcake every year, but he never really gave it away…since he loved it so much. To this day, it is the only thing he has ever baked in his entire life – that is how much he loves the stuff. So, we found the old recipe he used, from a 1950 copy of the Gourmet Cookbook. Still having this cookbook is a treasure in itself, and I think this is about as classic of a fruitcake as you can get.

So, we made a few loaves…and I started to understand the stigma around the dreaded dessert. It’s a dense cake full of weird candied fruit whose sole purpose is to put in the cakes, and then it literally “ripens” in booze for a few weeks. What? I’m all about things chillin in booze, but it was a little weird. However, this fruitcake is real, it’s not a store-bought 10 pound bowling ball that’s already wrapped and easy to regift. It’s real, old-school ingredients, that really don’t end up tasting that bad, if you are into that sort of thing. Which my family is. Jordan and I are still on the fence about classic fruitcake, but I totally get it now (finally). But I couldn’t stop there, I had to go on and make fruitcake cookies…

Don’t ask about the cat…He was apparently going through a fruitcake phase as well. Anyways though, I was a tad skeptical about these cookies. I hoped they would be lighter than actual fruitcake while I was letting the fruit soak in some booze. I hoped people would actually want to eat them…and they turned out great! They are not the prettiest cookie in the world…Sort of like the ugly duckling of cookies, not too cute, but once they hit your lips…so good! Continue reading →

Life lately...Has been filled with wishes, troubleshooting, and trying to stay organized.

Life lately…Has been filled with wishes, troubleshooting, and trying to stay organized. This was a fun part of wedding prep…a wonderful evening on the Lake that we are hoping to share with friends and family soon.

Life lately…Has been busy. I am looking forward to the days when I have more time to cook and write about it, maybe work on my photography skills, you know…the good stuff. With less than 60 days until the Wedding, things are getting crazy! I can’t wait for the insanity to be done! People ask me how things are going…I say, “Good? I think?” This whole time I just always feel like I am forgetting something, there are so many damn details.

I keep telling myself I am going to post about my wonderful Bridal Shower, but I can’t even get my ass in gear enough to upload the photos off my camera. It keeps getting pushed to the bottom of my list.

All of this isn’t to say I haven’t been having any fun…Here are some highlights from the last couple of weeks.

Anniversay

Jordan and I celebrated our 5 Year (dating) Anniversary at Canlis. This is another post I have been dying to publish, but I really need to find the time to make the Famous Canlis Salad at home first…It’s a classic for sure, I’ll let you know as soon as I take a stab at it. Canlis is most definitely worth every penny for a special occasion. The service was wonderful and we had such a great time!

Hunger SeattleWe went to Hunger in Fremont with a group of friends and had an awesome dinner. This Scotch Egg Special may have been the highlight for everyone…I highly recommend a trip here for dinner or Happy Hour!

Erin Rocking OutMy kickass friend Erin is in a band called The Wages of Sin. I watched them play a few weekends ago at The Two Bit Saloon in Ballard. It was probably one of the best nights out I’ve had all year…SO FUN AND ERIN IS AMAZING!!!

RN74Tomato Soup Fondue with Grilled Cheese Croutons from RN74. This is another must-try happy hour in Seattle…They have really fun small plates and awesome craft cocktails.

I haven't been cooking much lately, but I was inspired to throw this together after a stressful day. A puff pastry pizza with asparagus, feta, and eggs. Just things I had laying around. It turned out pretty good! Always a Win for me when I make something that doesn't completely bomb.

Husky Stadium Construction

No matter how crazy or how hard the day is, I get to come home to this guy. It’s been so great having him back here and not stuck on an island. I am so proud of him for the work he is doing on the new Husky Stadium. One of the best parts of having him back in the same city is to be able to hug and kiss him every day when we get home from work. It may seem small and lame, but I think it’s a good tradition for any couple to uphold.

Pink Panty Droppers

Ok. You may have seen the Natty Light and Monarch and immediately threw up in your mouth a little. But I can’t not tell you about how my friends and I totally had a few of these last weekend…and liked it.

Pink Panty Droppers. I hate the name, because I swear to god, I have never witnessed one panty drop during the consumption of this lethal party drink. I may or may not recall a time when a certain someone tasted one, thought, “WOW! these are delicious!” and an older and smarter friend took a sip, said, “Be careful with these.” That certain someone didn’t listen and about 30 minutes later was running into the woods from the cops, falling over, losing a flip flop, stopping against a tree and realizing the forest was spinning and that no, the cops were not out to get her…I digress. It’s tough to believe I didn’t share this with you 2 seconds after I got home from Labor Day Weekend 2012, but let’s just say I was a little tired. We had the privilege of going to our friend Danny’s cabin on Orcas Island last year, and I was going through photos and found all of these gems and am dreaming of going back.

This cabin has been in Danny’s family since the 1930’s. You step onto the property and you step back in time…It really makes me wish my Grandpa kept around relics like this instead of Costco cottage cheese containers (that’s a very unpretty story for another time).

We spent the whole weekend on the beach, kayaking, crabbing, bonfire-ing, and relaxing with no cell service. Hands down one of the best weekends ever.

I must admit, this video was the inspiration of Thirsty Throwback Thursdays on the blog. I was listening to this song, getting all philosophical with it…Because you know, “Every new beginning comes from some other beginnings end.”

Then I remembered the MUSIC VIDEO. I went back and watched it, and had a bit of a wtf moment. What? He can’t find her? WHERE IS HIS CELL PHONE?!? Why is she wearing a weird white pleather lab coat? Look at that slicked hair…OMG!!! ROLLER LIP GLOSS!

It was just too much. I have karaoke’d this song to close down the bar, I have listened to it probably on repeat before high school graduation, I was mulling over playing it at our wedding at some point (I know, gross. Good thing I’m thinking this through). Then the video is just so…90’s.

BUT to be real, I will probably be secretly listening to this song (only on philosophical occasions though) for the next 50 years.

So, Cheers to you, Semisonic. I did, however, own your CD (cd, haha!!!) and like the other songs on it. Singing in my Sleep anyone?

Ok, as if I don’t have enough “T’s” in there…Let me try to explain…

Last week I was thinking it might be fun to add a weekly “throwback” video of stuff that makes me happy for one reason or another…this will probably turn into a huge compilation of 90’s music videos.

BUT besides the concept of Throwback Thursday there is also Thirsty Thursday! AKA the time you are ready for your weekend to start and at 3PM you usually need a beverage of the alcoholic persuasion.

There it is. You can now come here every Thursday for either:
A.) Heartwarming, hilarious, ridiculous, and/or stupid youtube videos.
B.) A boozy beverage recipe.

You may be asking yourself, “What the f*ck is this? I’m out.” Don’t worry!!! It’s just a school project video from Jordan’s college days (with a few minor changes from our friend Dylan)…and the reason I chose this as my first video post is because it is JORDAN’S BIRTHDAY!!!

HAPPY BIRTHDAY JORDAN! I Love You and can’t wait for all of the fun stuff we have planned this year, like GETTING MARRIED! And yes, I secretly watch this video from time to time because I think it’s the funniest thing ever…
