Grilled Rib Eye with Orzo Salad
I’m in a zone right now where I’m trying to use up all of the food in the house. I saw this recipe in Sunset Magazine and thought it would be the perfect use for the large amount of orzo I have laying around.
The ingredients don’t seem like anything too fancy, but I was pleasantly surprised with the delicious results. Bonus: this is the best leftover bring-to-work lunch salad ever!
Recipe note: I could not find halloumi at my local store, the guy looked at me like I was making sh*t up. I ended up finding Kasseri, which is not the best grilling cheese, but it worked ok. Feta would me a much easier option, just crumbled over the finished salad.
Recipe
Grilled Rib Eye with Orzo Salad

Ingredients
  • 1 cup orzo pasta
  • 1 boneless rib-eye steak (about 1 lb.), about 1 in. thick
  • 1 pkg. (12 oz.) halloumi (if you are grilling the cheese), if not try feta, Kasseri, or myzithra
  • 6 tablespoons olive oil, divided
  • 1/2 teaspoon kosher salt
  • 1/2 cup pitted and sliced kalamata olives
  • 1/2 cup marinated artichoke hearts, chopped (not necessary, but a good addition)
  • 1/2 – 1 whole roughly chopped red bell pepper (depends on how much you like peppers – I went for it and added the whole thing).
  • 1/3 cup mint leaves, chopped
  • 1/3 cup oregano leaves, chopped
  • 3 tablespoons lemon juice

Preparation

  1. Heat a grill to medium-high (400° to 450°). Cook orzo according to package directions. Drain, then set aside.
  2. Brush steak and cheese with 2 tbsp. oil and sprinkle steak with salt. Grill both, turning once, until grill marks appear on cheese, and steak is done the way you like, 8 to 10 minutes for medium-rare. Let steak rest 10 minutes.
  3. Cut halloumi slices into quarters. Combine cheese, orzo, remaining 4 tbsp. oil, and remaining ingredients in a bowl; divide among 4 plates. Top with sliced steak.

This is an excellent asian-inspired steak salad. If you aren’t that into salads but love steak, the marinade is great on its own! Feel free to get creative here, next time I think I want to add some homemade croutons or some of those fancy crunchies you see in some salads! If you happen to be with your “average” American male, chances are he probably likes steak. A lot. I find that it is nice, every so often, to make your man a steak. I mostly think this because 99.9% of the time we eat steak, Jordan is the one grilling it.

The $75 Steakhouse Dinner: Filet Mignon, roasted broccoli, horseradish and dill mashed potatoes, and a double dirty martini. All made relatively quick on a Wednesday night. Boom!

For some reason, this recipe feels so 1950’s to me, because you put the steaks under the broiler. When I first cooked them, I was nervous they would be disappointing (like when you compare a pan-fried McDonald’s Burger to a char-broiled Whopper). However, this is not the case. Guacamole, and Taco Bars.

Only some of the essentials for a good Taco Bar…Bean Dip, limes, Pickled Jalapenos, black beans, guacamole, cilantro. Margaritas and corn salad doesn’t hurt either.

I don’t think I have ever met anyone who doesn’t like a good ole’ fashioned Taco Bar. So easy to prepare, perfect for a party.

Mmm…steak taco. I obviously like my steak rare.

And then there’s guacamole. Always an integral part of any taco bar or lonely chip. I like all guacs, and tend to make it different every time. Before I ever tried making it, I was convinced guacamole was this really hard thing to make…But it’s so easy to just wing it. Here’s a basic recipe:

Recipe
Guacamole
Serves 6

  • 5 avocados, pitted
  • 1 garlic clove, minced
  • 1/4 cup chopped white or yellow onion
  • 1 jalapeno pepper, minced
  • 2 tbsp chopped cilantro
  • 1 chopped tomato (if you like your guac “pure” you can leave this out)
  • Juice of 1 lime

Toss everything into a bowl. Mash, and salt to taste. Serve with chips.

Other additions to consider:

  • chopped red onion
  • pickled jalepeno peppers, plus a few tbsp. vinegar from the jar

Ok, time for me to go on a huge tangent (I guess it’s not really a tangent since it’s my first sentence…) but this is how it all started:

I joined Twitter for “professional” reasons about a month ago. I still have no idea what I am doing on there, nor do I know if I even like it that much…but anyways, my friend Morgan told me I *HAD TO* start following Chrissy Teigen. I didn’t recognize her name, but I instantly knew she was super hot and liked food. Pretty good combo. A few days passed, I got on Twitter again, and was like, “Who IS she?” Then found the link to her website, and oh my god, it is basically my dream blog. Food…recipes…obsessed with Pioneer Woman…holy shit, is that John Legend?!? WHAT IS GOING ON!!!

So then I go to wikipedia, and find out that not only is she some awesome swimsuit model, BUT SHE IS FROM SNOHOMISH. Which means we were basically neighbors and therefore would probably be best friends if we met in real life. Then I finally make the connection that she was the model in almost all of the Alloy catalogs I used to get back in the day (aka two years ago…but nevermind that) and I am just super in love.

So I made a few of her recipes this weekend.

And they did not disappoint. The steak may have gotten a little overcooked (those damn limes…) and we may not have had all the fancy ingredients, but this still turned out so good! I always figured the first thai dish I tried to make would be an epic failure, but no! If you have never made a thai dish before, this is a great place to start! And low carb and totally healthy in my book. If I eat this everyday, I am hoping my body will morph into a double of Chrissy’s.

Recipe
Thai Beef Salad (Yum Nua)

Ingredients

  • Good steak, cooked preferably on a grill to rare or medium rare (the lime will do some additional cooking). Allow to rest at room temp before slicing.
  • 4 Shallots or 1 small red onion, sliced into skinny wedges
  • 1 bunch Cilantro, coarsely chopped, no stems
  • Tomatoes, cherry (1/2 c sliced in half) or 1-2 vine ripened (cut into wedges)
  • 2 Limes
  • 1 tbs Palm sugar or brown sugar (I used brown)
  • 1-2 tbs Fish sauce
  • 1tbs Thai chili powder or regular chili powder if you go to lame grocery stores like me
  • Fresh Thai chili peppers or jalapenos, sliced thinly

Grill the steak as directed above and slice into thin strips after allowing to rest for 15-20 min.  Add to a large mixing bowl. Add palm or brown sugar to a small bowl and add some of the lime juice and mush into a thick liquid form. The non-vegetable ingredients go first into the steak bowl, lime, fish sauce, chili powder, sugar. Toss with your hands to incorporate all over the steak. Add the rest of the veggies, toss and taste. Tasting as you go is the most important part. Mine tasted amazing right off the bat, so no adjusting required.

NOTE: It is highly likely you will be seeing more posts relating to Chrissy Teigen, she is a girl crush (and blog crush) that I don’t see going away anytime soon. ❤
