This is one of the easiest recipes in our arsenal and a total favorite! I wouldn’t know about the amazingness that is Major Grey Chicken Curry if it weren’t for my friends Ursula and Megan. They introduced me to Shamiana restaurant in Kirkland years and years ago. While everything is good there, we all agree that the Major Grey Chicken is a standout. When I started working right near Shamiana and could hit up their lunch buffet, my obsession got even worse…and my work days got a lot less productive when I was coming back from a lunch buffet so full I could barely move. I had to try to keep my trips there to a minimum but it was hard on some days!

This recipe is super easy to make at home and is perfect served with some rice and naan. In the future I’ll probably add some veggies to this curry to make it a more well-rounded meal. The original recipe I found online calls for chicken breasts but I’m pretty sure the restaurant uses thighs. I also like to cook my chicken almost all of the way through before adding it back to the curry where some of the recipes had you add the chicken when it wasn’t cooked all the way through. You could really use any chicken for this dish, such as leftover rotisserie chicken, whatever you have on hand!

Recipe
Major Grey Chicken Curry
Inspired by Shamiana Restaurant in Kirkland, WA
Serves 6

Ingredients

  • 3 lbs boneless skinless chicken thighs (can sub chicken breasts, or use a mix of both)
  • 1 medium onion, diced
  • 2 1/2 tbsp olive oil
  • 1/4 cup curry powder
  • 1 (9 oz) jar Major Grey mango chutney
  • 1 1/2 cups heavy cream
  • pinch of salt
  • 1/2 cup diced green onion, for garnish
  • jasmine rice and/or naan, for serving

Directions

  1. Heat about 2 tbsp oil in a large skillet over medium heat. Add chicken and cook until almost finished, about 4 minutes on each side. Remove chicken and cut into bite-sized pieces. Set aside.
  2. Add remaining 1/2 tbsp oil to pan and add diced onions. Cook for a few minutes until translucent. Whisk in curry powder and cook for at least 2 minutes. Whisk in Major Grey’s Chutney and the cream. Add salt to taste.
  3. Add diced chicken pieces and cook for another 3 minutes or so. Turn heat to a simmer, stir, and check seasonings. Serve curry over jasmine rice and garnish with green onions.

I know just yesterday was Granola Bar Day and now suddenly it’s Blonde Brownie day and you probably officially think I’m crazy and I probably am but I just REALLY have always wanted to give the below recipe a shot…and finally I had my excuse to execute it.

In high school, we found ourselves at a certain chain restaurant a lot. Like, there wasn’t as much back in our town then, and for some reason we always went to this “neighborhood” establishment because I was too busy being a teenager to really worry about where we were going, we just needed a place to “hang out.” Remember those days? Yikes. I wish I could quietly be at another table and watch my teenage self with my semi-responsible adult eyes that I have now. Or maybe I don’t. Anyways…

They had this dessert – I think then it was just called the “White Chocolate Blondie” but it came out in a sizzling hot skillet – and it was a blondie with a big scoop of ice cream on top and this ridiculous maple sauce. It was hot/cold, and it was the best flavor explosion my teen self had ever tasted. It was the one thing from that place that I loved to eat. Back then, I never thought about creating it at home. Over the last few years, I have told myself that this magical dessert would be recreated in my kitchen. I knew it probably wouldn’t be too hard.

For our 5 year (half decade!) anniversary, Jordan and I had the privilege of going to Canlis in Seattle. If you watched Top Chef Seattle, or know anything about the Seattle dining scene, you know Canlis is the place to go.

To kick things off - my half gone cocktail, The Count Camillo Granita. Made with Plymouth Gin, Americano Cocchi, orange, cracked maple orange bitters and Campari sugar. Also, our delicious amuse bouche carrot curry soup.

When you step into Canlis, you are stepping into a piece of Seattle history that the Canlis brothers continue to build on everyday. The staff provides impeccable service and you truly feel special when you are there. Jordan and I were a little giddy and nerdy the whole time because we were so excited to be there, and the staff still handled all of our random questions without a blink!

We opted to go the route of “Classic Canlis,” ordering a few original menu items from the 1950’s. The Canlis salad was one of them, and it did not disappoint! (Recipe from the Canlis website at the end of this entry).

We ordered a few contemporary items as well, such as the Hamachi Sashimi above which was the best sashimi I have ever had.

We also tried a Wagyu Steak for the first time and were not disappointed.

Jordan and I have vowed to try the tasting menu next time we go to Canlis (I am already trying to find an excuse to return) since we got our “classic” experience in.

I have to say, the experience was so special and fun that I got a little emotional a few times. The first was when Jordan nonchalantly busted out a small Tiffany bag with a necklace, and the second when the staff brought out our desserts…

I can only imagine the other things that are done on a daily basis for special occasions at Canlis. If you have something special coming up, I couldn’t recommend a stop at Seattle’s most iconic restaurant.

Apologies for the brief hiatus – I have been caught in the craziness that is moving. God, I forgot how hard, exhausting, and time consuming moving is. Thankfully, we have an awesome and very unique happy hour spot close to our new place – The Puffin Cafe.photo 2The place is literally floating on the Columbia River – I have been to many restaurants on the waterfront, but nothing quite like this. As you are sitting there you will suddenly feel the restaurant move and lurch around…probably not always the best thing when people are drinking $5 margaritas, but damn it sure is fun! The 21st Night of Septembaaa?

It is a “Holiday” that I have celebrated the last few years, for several reasons:

1. The song by Earth, Wind & Fire is, and always will be, one of my all time favorites.
2. It’s my Mother-in-Law’s Birthday.
3. Who doesn’t love September?!?

Even though I typically listen to this song on repeat for most of September, it’s really a great song for any day, and always brings back memories for me that are filled with joy and love.

Here is a look at our September, we have managed to do a lot of fun things post-honeymoon.

We took the Water Taxi from Downtown to West Seattle and had dinner at Marination Ma Kai, right off the Water Taxi Terminal. This is one of the tastiest and funnest double dates we’ve ever been on! The food is absolutely incredible, service rocks, and all I can say is I want more!

Technically this wasn’t in September, but Jordan’s work on the new Husky Stadium is officially complete and the new facility is amazing! So proud of this Husky.

I have been reading all about Shanik in South Lake Union. It’s the sister restaurant of the highly regarded Vij’s in Vancouver, Canada. This was probably the awesomest Indian Food I have ever tasted. Warning: The menu reads, “We get a new batch of cayenne every week, so if you are feeling the heat please ask for some raita!” Holy Smokes, I felt the heat, not in a mouth-is-on-fire kind of way…but let’s just say it put a whole new meaning to the phrase “Meat Sweats.” The most worth-it meat sweats ever.

It’s definitely still Summer when you are eating Caprese Salads with fresh garden heirloom tomatoes, garden basil, and Rose. It’s the only thing I want to make with our garden tomatoes. Why would I want to roast those beauties when they are perfect raw?!?

Swim Across America

My mom, aunt, uncle and I participated in Swim Across America. My aunt and I did the 2 mile swim, mom and Uncle Don did the half mile race. Swim Across America is dedicated to raising money for cancer research, prevention and treatment. This year our team swam in honor of Tricia, who is a true survivor and had a double mastectomy in the Spring. We all had a very fun and successful day, it was great to be a part of such a wonderful team.

In other news, it has come to our attention that our dog poops in the lake. Has anyone ever heard of this before?!? It is truly bizarre, and I cannot help but crack up at the fact that Otto has been caught doing this on more than one occasion. Maybe he wants to poop in the toilet? Maybe he feels more relaxed in the cooling waters? Who knows, we have seen him pee in the lake many times before, but he is taking it to the next level.

Life lately...Has been filled with wishes, troubleshooting, and trying to stay organized.

Life lately…Has been filled with wishes, troubleshooting, and trying to stay organized. This was a fun part of wedding prep…a wonderful evening on the Lake that we are hoping to share with friends and family soon.

Life lately…Has been busy. I am looking forward to the days when I have more time to cook and write about it, maybe work on my photography skills, you know…the good stuff. With less than 60 days until the Wedding, things are getting crazy! I can’t wait for the insanity to be done! People ask me how things are going…I say, “Good? I think?” This whole time I just always feel like I am forgetting something, there are so many damn details.

I keep telling myself I am going to post about my wonderful Bridal Shower, but I can’t even get my ass in gear enough to upload the photos off my camera. It keeps getting pushed to the bottom of my list.

All of this isn’t to say I haven’t been having any fun…Here are some highlights from the last couple of weeks.

Anniversay

Jordan and I celebrated our 5 Year (dating) Anniversary at Canlis. This is another post I have been dying to publish, but I really need to find the time to make the Famous Canlis Salad at home first…It’s a classic for sure, I’ll let you know as soon as I take a stab at it. Canlis is most definitely worth every penny for a special occasion. The service was wonderful and we had such a great time!

Hunger SeattleWe went to Hunger in Fremont with a group of friends and had an awesome dinner. This Scotch Egg Special may have been the highlight for everyone…I highly recommend a trip here for dinner or Happy Hour!

Erin Rocking OutMy kickass friend Erin is in a band called The Wages of Sin. I watched them play a few weekends ago at The Two Bit Saloon in Ballard. It was probably one of the best nights out I’ve had all year…SO FUN AND ERIN IS AMAZING!!!

I haven't been cooking much lately, but I was inspired to throw this together after a stressful day. A puff pastry pizza with asparagus, feta, and eggs. Just things I had laying around. It turned out pretty good! Always a Win for me when I make something that doesn't completely bomb.

Husky Stadium Construction

No matter how crazy or how hard the day is, I get to come home to this guy. It’s been so great having him back here and not stuck on an island. I am so proud of him for the work he is doing on the new Husky Stadium. One of the best parts of having him back in the same city is to be able to hug and kiss him every day when we get home from work. It may seem small and lame, but I think it’s a good tradition for any couple to uphold.

Last weekend we had the amazing opportunity to spend our birthdays at my aunt’s cabin in Neskowin, on the Oregon Coast. It was the perfect weekend, and we managed to luck out with some fantastic weather!

Our journey started out with a pitstop at the Tillamook Cheese Factory along Highway 101. This is something I have always wanted to do, growing up about 2 hours away it seemed like everyone had been there except for me. Not anymore!

Tours are free and self-guided. You basically get to look through a glass window and see what’s going on in the factory down below. But I think the real reason people go is for the free samples and the awesome store/cafe with every flavor of Tillamook you could ever imagine!

Did you know April is grilled cheese month? Lucky us...We tried the "Dreamiest Grilled Cheese Plus" Tillamook PepperJack and Vintage White Extra Sharp cheese with roasted red peppers, prosciutto, Dijon mustard and pickle relish all grilled on hazelnut bread.

After Tillamook we made the attempt to go to Cape Meares State Park, but the road leading out to it was closed. I wasn’t sure if there was an alternate route (thanks Siri for not helping at all), but at this point it had started to rain and I figured that’s what the rest of our weekend was going to look like, but we still decided to take a second detour to Munson Creek Falls, a super easy hike to the tallest waterfall in the Coastal Range. Our final stop before arriving at the cabin in Neskowin was in Pacific City, a small surf town with a few little restaurants and stores.

We decided to grab a quick drink and takeout at the Pelican Pub in Pacific City before heading out of civilization (Neskowin has 1 store and restaurant which are currently closed for construction). The Pelican Pub brews their own excellent beer and has a pretty extensive menu for such a small town. We opted for the shrimp pizza with a salad.

We woke up on Saturday and realized it was no longer raining! So, we spent most of the gorgeous day on the beach, relaxing and enjoying the scenic views.

I want to go back right now. It was such a beautiful and relaxing time, and I am very Thankful Jordan and I got to spend our birthday weekend here! I am still amazed the weather Gods blessed us, because it apparently hailed in Seattle over the weekend. Oregon Coast, I am missing you so much right now and it has only been a few days!

For Jordan’s Birthday we hit up 2 very sought-after Seattle spots: Canon for a pre-dinner drink, and then Lark for the main event (It just so happened to be Seattle Restaurant Week: 3 courses for $28)! These establishments are literally right next door to each other. You can’t go wrong with this combo.

Both spots were incredible and worth a trip back. The service at Canon was awesome (I wasn’t sure if there would be some major ego there after Anthony Bourdain stopped by during his Layover). The atmosphere is great, and quite obviously so are the cocktails!

Lark is one of those places I have heard about for years and somehow I’ve never gone (that and a list of about 200 other Seattle establishments). We had a great time and enjoyed some wonderful food. Continue reading →
